Chocolate Chip Oatmeal Cookies

1 cup butter
1 1/2 cups brown sugar
1/4 cup white sugar
2 eggs
2 tsp vanilla
1 tsp baking soda
1 tsp salt
1 3/4 cups flour
2 1/2 cups oats
2 cups chocolate chips

Mix together and bake at 350 degrees.

Easy Slow Cooker Roast

1 package dry Ranch dressing
1 package dry Italian dressing
1 package dry brown gravy
Beef roast

Pour 1 cup water into bottom of slow cooker.  Add meat.  Sprinkle dry seasoning packages on top of the roast.

Cook on low for 7 hours.

After roast is finished, pour juices into saucepan and reduce by half, serve as gravy.

Hot Chicken Salad

1 package wide chow mein noodles
3 lb bag chicken breasts cooked and shredded
1 1/2 cup light mayo
1 1/2 cup light sour cream
1 can cream of chicken soup
3 cups chopped vegetables, any combination, frozen veggies work too
1 1/2 cups cheddar cheese
1/2 cup swiss
(or any cheese combination you prefer)

Combine soup, mayo, sour cream, and chicken.  Sprinkle 9x13 baking pan with half the chow mein noodles, layer in chicken mixture, veggies, cheese, and top with remaining noodles.

Bake at 350 degrees until heated through, 30-45 minutes.

Rice Krispie Bars

1 cup sugar
1 cup light corn syrup
1 1/2 cups crunchy peanut butter
5-6 cups Rice Krispies
1/2 bag chocolate chips
1/2 bag butterscotch chips

Melt sugar, corn syrup, and peanut butter in large pot over low heat.  Remove from heat.  Fold in Rice Krispies.  Pat mixture in 9x13 pan.

For chocolate topping, melt/soften chocolate and butterscotch chips in microwave and spread over top, OR sprinkle chips over bars in the pan and place in broiler for 2-3 minutes until softened, then spread.

Swedish Chop Suey

Swedish Chop Suey?  What the heck is that?  You might also know this as Goulash, the quintessential Minnesota Hot Dish.  Our family recipe was passed down from Grandma Sjostrand.

1 lb ground beef
1 large onion
1 cup chopped celery
Mushrooms
1 can cream of mushroom soup
1 can cream of tomato soup
1 package egg noodles
Parmesan cheese
Tomato sauce/Tomato paste/diced tomatoes (add to taste)
Grated cheese (chef's choice)
salt and pepper (to taste)

Brown beef and onion.  Drain.  Cook celery.  Cook noodles according to package directions.  Mix noodles, veggies, beef, parmesan, soups, salt and pepper together.  Add tomato sauce or tomato paste or diced tomatoes for extra tomato flavor, according to taste. Put in baking dish.  Sprinkle top with grated cheese.

Bake at 350 degrees for one hour or until heated through.

Hip Padder Bars

1 cup brown sugar
1/2 cup butter
1 egg
3 tsp vanilla
1 1/4 cup flour
1/2 tsp baking soda
1/2 tsp salt

Mix the above ingredients together and press 2/3 of mixture into a 9x13 pan.

1 can sweetened condensed milk
6 oz chocolate chips
2 T butter

Melt above three ingredients in microwave and pour over crust.

Drop remaining crust mixture over filling by spoonfuls.  Crust mixture is thick so you may have to press it down with your fingers.

Bake at 350 for 15-20 minutes.

Blonde Brownies

2/3 cup butter
2 cups brown sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1 package chocolate chips
1 cup walnuts (optional)

Cream butter, sugar, eggs, vanilla.  Add dry ingredients.

Bake at 350 degrees for 25 minutes.

Italian Shortbread

1 1/2 sticks butter, softened
1/2 cup sugar
1/2 tsp almond extract
1 1/2 cups flour
1/8 tsp salt
1/4 cup apricot jam
1/3 cup sliced almonds
Powdered sugar for dusting

Prehead oven to 350 degrees.  Have ready an ungreased 9" springform pan or a tart pan with a removable bottom.

Beat the butter and sugar on medium speed in mixer until light and fluffy.  Add almond extract and beat on medium speed for 30 seconds to blend well.

In a small bowl, whisk together flour and salt.  Add to butter mixture and beat on low speed just until blended. 

Press dough into pan.  Spread jam evenly over the dough to within an inch of the edge.  Sprinkle almonds evenly over the top.

Bake for 40-50 minutes until golden brown.  Remove from oven and let cool completely on a wire rack.

Remove the sides from the pan, dust with powdered sugar before serving.

Barb's Rhubarb Krumble

6 cup diced rhubarb
2 eggs, beaten
2 cup sugar
6 T flour

1/2 cup butter
2/3 cup brown sugar
1 1/2 cup flour

Preheat oven to 350 degrees. Mix together rhubarb, eggs, sugar, and 6 tablespoons flour. Pour into a 9 x 13-inch pan, that has been lightly greased. Combine butter, brown sugar, and flour. Crumble over top of rhubarb mixture. Bake at 350 degrees for 30-40 minutes. Serve warm with vanilla ice cream, whipped cream, or Cool Whip.

Crunchy Cabbage Salad

Salad:
1 head shredded red cabbage
2 packages Ramen noodles
8-10 green onions sliced
1 cup sunflower seeds
1 cup toasted slivered almonds

Dressing:
1 cup safflower oil
4 T rice vinegar
4 T sugar
2 packets Good Seasons Zesty Italian dressing

Add dressing to salad just before serving.
